INGREDIENTS

    Strawberry Layer

  • 1 pound California Giant strawberries, chopped
  • 2 tablespoons lemon juice
  • 3 tablespoons granulated sugar
  • Pineapple Layer

  • 2 cups chopped pineapple
  • ¼ cup lemon juice
  • Equipment

  • High-Powered Blender or Food Processor
  • 10-count popsicle mold

DIRECTIONS

      • Gather ingredients, blender, popsicle mold, and popsicle sticks.
      • In a blender add chopped strawberries, lemon juice and sugar; blend until smooth, about 20-30 seconds. Evenly distribute the strawberry layer into the 10 popsicle molds. (Use a funnel for easier pouring.)
      • Rinse out blender with water then add chopped pineapple and lemon juice; blend until smooth. Evenly distribute the pineapple layer into the popsicle molds, leaving about ½” from top of mold.
      • Secure mold with lid, add in sticks and freeze for at least 6 hours.
      • To remove popsicles, run outside of mold under warm water, until popsicle releases.
      • Store any leftovers in a parchment lined freezer-safe container with lid. Enjoy within 2 weeks.
