This fluffy and flavorful bread is the perfect way to enjoy the sweet taste of strawberries and bananas. The moist texture and burst of fruity flavor make it a delicious breakfast or snack option.

INGREDIENTS

  • 1 ¾ cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup chopped strawberries (cut into 1” pieces) + 1 tablespoons flour
  • 1 cup well-mashed extra-ripe banana (about 3 small-medium bananas)
  • 1/2 cup maple syrup
  • 1/3 cup avocado oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

DIRECTIONS

      • Preheat oven to 350ºF and line medium 8x4 loaf pan with parchment paper (allowing overhand); set aside.
      • In a medium bowl combine dry ingredients: flour, baking soda, salt and cinnamon; set aside.
      • In a small bowl, toss chopped strawberries with flour until strawberries are coated; set aside.
      • In a large mixing bowl, whisk together mashed banana with maple syrup and oil until combined. Add in eggs and vanilla extract, whisking until smooth. Add in the bowl of dry ingredients, stirring until just combined, then gently fold in strawberries, until no dry flour spots remain.
      • Transfer batter to a lined loaf pan and bake for 35 minutes uncovered. Check on bread and tent pan with foil so top is lightly covered, and continue baking for another 10-12 minutes, or until toothpick inserted in center comes out clean.
      • Allow bread to rest in pan for 10 minutes, then transfer to a wire rack to cool. Slice and enjoy!
