This Burrata, Caramelized Onion, Mixed Berry Grilled Flatbread makes for a light and refreshing meal. Serve as a shareable, or on naan bread for individual portions.

INGREDIENTS

  • 1 (16 oz) pizza/flatbread dough
  • 1 ball of burrata, ripped
  • Handful of arugula
  • Handful of California Giant blueberries
  • Handful of California Giant blackberries
  • Handful of California Giant strawberries
  • ½ small yellow onion, sliced into very thin pieces
  • Toppings:

  • Olive oil
  • Sea salt
  • Chili flakes

DIRECTIONS

      • Roll out the dough and cook as the packet instructs. In the meantime, add a drizzle of olive oil to a medium size sauté pan. Saute the onions with a pinch of sea salt on medium-high heat. Cook for about 15 minutes or until the onions caramelize down - add a splash of water when the pan dries out.
      • Once the flatbread has cooked in the oven, place it on a very hot grill pan and cook on one side until it has charred grill marks. Remove and now add the cheese to the flatbread, then top with the onions, arugula, berries, drizzle of olive oil and sea salt. At this point you can enjoy as is or pop in the oven for the cheese and berries to warm for about 5-8 minutes on 375F.
      • Cut into pieces and enjoy!
