These Berry Baked Oatmeal Cups are a protein-packed breakfast option featuring blueberries, strawberries, and protein powder. Perfectly portable and quick to prepare in just 25 minutes, they offer an easy and nutritious start to your day!

INGREDIENTS

  • 1 cup soy milk (oat, cashew, almond or cow’s milk also fine)
  • ⅓ cup pure maple syrup
  • 2 large eggs
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • 1 & 3/4 cups quick cooking oats
  • 1/2 cup pea-based plant protein powder
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons chia seeds
  • 1/2 cup California Giant blueberries
  • 1/2 cup chopped California Giant strawberries

DIRECTIONS

      • Preheat oven to 350ºF and grease a 12-cup muffin pan.
      • In a large bowl whisk together milk, maple syrup, eggs, oil and vanilla. Add in quick oats, protein powder, baking powder, salt and chia seeds. Stir gently then fold in blueberries and chopped strawberries.
      • Evenly distribute oatmeal mixture into the greased muffin pan, filling each cavity about ¾ way full.
      • Bake for 18-22 minutes, or until tops are lightly golden.
      • Allow oatmeal cups to cool in pan for 5 minutes before transferring to a wire rack to cool completely.
      • Store oatmeal cups in the fridge, enjoy within 5 days.
