Mixed Berry Labneh Flatbread with Caramelized Pistachios

A delicious and easy to make appetizer or light meal that is perfect for summer! The flatbread is topped with a creamy labneh mixture that is made with blueberries, blackberries, and labneh. The caramelized pistachios add a touch of sweetness and crunch to the dish.

INGREDIENTS

    For the Mixed Berry Labneh:

  • 1 cup labneh, store bought
  • 1/4 cup California Giant Blueberries
  • 1/4 cup California Giant Blackberries
  • For the Caramelized Pistachios:

  • 3/4 cup pistachios, chopped
  • 1 tbsp drizzle of honey or maple syrup
  • 1 tsp extra virgin olive oil
  • Pinch of sea salt
  • For the Pizza:

  • 1 (16 oz) pizza/flatbread dough
  • Extra blueberries and blackberries and basil leaves for topping

DIRECTIONS

      • Roll out the dough and cook as the packet instructs.
      • Now make the berry labneh by adding all the ingredients into a food processor and blending until combined. Pour into a small bowl and set aside.
      • Next, make the caramelized pistachios by adding the pistachios onto a parchment lined baking sheet. Add the honey and olive oil drizzle on top with a pinch of sea salt. Mix well. Cook on 250F for 15 minutes, turning half way. Remove from the oven and set aside.
      • Once the flatbread has cooked in the oven, place it on a very hot grill pan and cook on one side until it has charred grill marks. Remove and let the flatbread cool for about 10 minutes
      • Generously top with the berry labneh, the caramelized pistachios, extra berries and basil leaves. Slice and enjoy!
